Feeney’s Irish Cream Fudge

There is nothing I love more than a sweet, soft fudge as an occasional treat! So when Feeney’s Contacted me and asked me to create some recipes using their Irish Cream – I knew exactly what I was going to make. The first recipe in the series is Feeneys Irish Cream Fudge. So smooth and creamy, and a devine little post dinner snack once the kids are in bed 😉

If you’ve got a Thermomix, it’s SUPER easy to whip up. It is also completely achievable on stove top – however during the heated stages – you will need to stand and stir the fudge the entire time.

What You Need:

  • ¼ Cup of Feeneys Irish Cream
  • 200g White Chocolate Melts
  • 120g Brown Sugar
  • 1 Can / 400g of Condensed Milk
  • 125g Butter
  • 30g Liquid Glucose
  • 50g Golden Syrup

What to Do (Thermomix)

  1. Grease and line a 20cm square cake tin with baking paper
  2. Mill chocolate melts –10 Seconds, Speed 9

  3. Place butter, condensed milk, golden syrup, glucose syrup and brown sugar in TM bowl – 5 mins, 50C, Speed 1 
  4. Increase temperature to 70C, 5min, Speed 1 (MC off)
  5. Increase temperature to 120C, 13 mins, Speed 2 (MC off)
  6. Add in white chocolate & Feeneys Irish Cream – 2 mins SP2 (MC on)

  7. Pour into lined baking pan and smooth the top.

  8. Place in fridge overnight or until firm.
  9. Cut into 2 cm square pieces.

  10. Enjoy

 

What to Do (Stove Top)

  1. Grease and line a 20cm square cake tin with baking paper
  2. Grate chocolate melts.
  3. Place butter, condensed milk, golden syrup, glucose syrup and brown sugar in saucepan – melt on low heat – stirring continuously.
  4. Increase to medium heat and stir continuously for 15 mins – ensuring not to burn. Lower heat slightly if fudge begins to burn.
  5. Add in white chocolate & Feeneys Irish Cream, stirring on low heat until chocolate is melted.
  6. Pour into lined baking pan and smooth the top.
  7. Place in fridge overnight or until firm.
  8. Cut into 2 cm square pieces.
  9. Enjoy
