Salmon Rissoles

Sadly and frustratingly, there isn’t alot of foods Kruize will eat (that I lie, he will eat foods – but food that I would rather he didn’t). His ‘go to’ meals (I wouldn’t even call them that!!) are:

Cheese Sandwhiches/Wraps.. okay So I was actually going to create a little list of foods that I could guarantee he would eat, until I realised theres actually really only one/two! Don’t get me wrong, he will eat other foods but it is very dependent on his mood. These foods include sausages *shudders, ick!*, mashed potato, bananas, apples, yogurt and biscuits. So as you can see it’s super fun come dinner time!

Last night, for the first time in quite some time, I decided to make salmon rissoles for dinner. This was also one of his favourite foods before he grew an attitude. I was expecting him to not eat it (hence the back up of mashed potato that I showed my snapchat viewers!). However to my surprise he ate not one but two whole rissoles! He loved them just as much as he did when he was younger. So I thought it would be a nice idea to share the recipe with you all, in the hope that maybe some other ‘fussy’ eaters will enjoy them too! I served ours with a quick superfood stirfry on the side aswell. Not only is this recipe fairly healthy, free from additive but it’s also quite simply and quick to make! Enjoy.

Salmon Rissoles

400g Salmon (I used tinned Red Alaskan Salmon) – remove bones.
2 Potatoes
1 Egg
1 small handful of fresh herbs, chopped (chives, parsley etc)
2 pieces of bread – crusts are best!

Peel, steam, then mash potatoes – add to bowl.

Remove bones from salmon (I try and get them all out, however the smaller ones do disintergrate) – add to bowl

Using a food processor – turn bread into crumbs. Add half to the bowl.

Add one egg and chopped herbs.

Mix all ingredients together until combined.

Roll into patties and crumb using remaining bread crumbs.

Bake in a 180degree oven for 20 minutes or until brown.
